  1. In a large pot or Dutch oven, combine the split peas, water and onion. Bring to a boil over medium-high heat and then reduce the heat to low and simmer for 30 minutes. 2. Add the carrot, celery, garlic, olive oil or butter, salt and pepper. Stir well and continue cooking for another 30 minutes. 3. Add the vegetable broth or stock and bring to a boil over high heat. Reduce the heat to low and simmer for 10 minutes. 4. Ladle into soup bowls and top with fresh chopped parsley before serving hot.
